DESCRIPTION: Delicious Grilled Chicken Taco Pizzas are a favorite for just about any crowd (or just for yourself when you snuggle up with your cat to watch a movie.
Ingredients:
- TACO SEASONING:
- 2 tablespoons onion powder
- 2 tablespoon garlic powder
- 1 tablespoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- salt and pepper
PIZZAS:- 1/4 cup canola oil, plus more for brushing
- 1 pound skinless, boneless chicken breasts
- 16 oz. Tube pizza dough
- flour for dusting
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar
- 1 avocado
- juice of 1 lime
- ½ teaspoon ground cumin
- ½ teaspoon chili powder
- 1 tablespoon diced red onion
- salt and pepper
- 1 cup salsa
- ½ cup sour cream
- 1/4 cup chopped cilantro
Directions:
MAKE TACO SEASONING: mix all ingredients with 1 tablespoon each of salt and pepper in a bowl.PREPARE PIZZA:
- Mix 2 tablespoons taco seasoning and canola oil in shallow bowl. Pound the chicken to 1/4 inch thick. Add chicken to bowl, turning to coat and marinate 30 minutes.
- Preheat grill to medium high. Grill chicken until cooked through (about 4 minutes each side). Let cool, then cut into bite sized pieces.
- Divide the dough into 3 pieces. Roll out each on floured surface to 8 inches round. Brush with canola oil, sprinkle with taco seasoning and grill until crisp (3-5 minutes per side).
- Mix the cheese in a bowl, then sprinkle on the crusts and top with chicken. Return pizzas to grill, cover and cook until cheese is melted. Meanwhile, mix the avocado, lime juice, cumin, chili powder, red onion and salt and pepper to taste. Top pizzas with the avocado mix, salsa, sour cream and cilantro.
